Miami Burger
Bobby Flay

“Turning this Cuban specialty into an American one isn’t hard to do: just replace the roasted pork with a good old hamburger. Pressing the assembled burger not only yields a crispy toasted bun, but also ensures that all of the elements meld into one cohesive, mouthwatering sandwich.”

Ingredients:

1 pound ground chuck (80% lean) or ground turkey (90% lean)
Kosher salt and freshly ground black pepper
1½ tablespoons canola oil
1/2 cup mayonnaise
4 cloves roasted garlic, mashed
4 hamburger buns, split
1/4 cup Dijon mustard
8 thin slices Swiss cheese
4 thin slices smoked ham
2 dill pickles, sliced into 1/4-inch-thick slices

Preparation:

Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper. Cook the burgers, using the oil. Remove the burgers to a plate.

Combine the mayonnaise and roasted garlic in a small bowl and season with salt and pepper to taste. Spread both sides of each bun with the mayonnaise and the mustard. Place a slice of cheese on each bun bottom, place a burger on top, and then top the burger with a slice of ham, another slice of cheese, and some pickle slices. Cover with the bun tops.

Cook the burgers on a sandwich press or wrap the burgers in aluminum foil and cook in a hot skillet over high heat (put a heavy skillet on top of the burgers to press them) until golden brown and the cheese has melted, about 1½ minutes per side. Serve immediately.

Jucy Lucy

Ingredients:

2 lbs ground beef (80-85 percent lean)
6 slices American cheese
6 hamburger buns
steak seasoning
Optional toppings: pickle slices, fried onions

Preparation:

Preheat grill to 400°F.

Divide beef into six portions. Roll one portion of meat between hands, working it together to create a tightly formed ball (the beef should not be crumbly). Divide ball in half, forming one half into another ball and then flattening it into a large circle on a cutting board (should be larger than the bun size, as the beef will shrink a bit during cooking).

Fold one slice of American cheese into quarters and arrange the cheese in the center of the beef, overlapping the slices a bit to leave the beef edges exposed. Roll the other half of the beef into a ball and flatten into a circle the same size as the first, then lay it onto top of the cheese. Pinch the edges of beef together, sealing all holes. You will have a lump in the top of the patty where the cheese lies inside. Repeat with the rest of the beef to create six lucy patties into total. (Burger patties can be made in advance and then refrigerated until ready for grilling.)

Place burger patties on grill, pocket of cheese side up. Sprinkle each patty with steak seasoning. Close lid and grill for 8-9 minutes, then flip burgers. Pierce each patty once with a sharp knife to let out the steam from the melting cheese. Close lid and continue cooking 7-8 minutes longer. At this point, you can either move the patties to a low heat on the grill to keep until ready to serve or pull them off onto a clean plate and cover with foil.

Assembly:
If serving with optional toppings, lay pickle slices on bottom half of bun, followed by fried onions and then one jucy lucy patty and the top of the bun.

Note: The cheese inside a jucy lucy is extremely hot. Let burgers rest for a couple minutes before eating.

Extra Good Burgers

There's no excuse for merely slapping a patty of fresh ground beef on the grill when you can just as easily throw a few things in it and get something that is far greater than the sum of its parts.

Ingredients:

1 tsp olive oil or a few squirts of cooking spray
1/2 onion, chopped
1 lb. ground meat (turkey or beef)
1 large egg, beaten
2 TBSP chopped fresh parsley
1 garlic clove, minced
1/2 tsp. dried tarragon
1/2 tsp. salt
1/4 tsp. ground pepper

Preparation:

Preheat broiler and oil broiler pan (with olive oil or cooking spray). In a small pan, saute onion in olive oil or cooking spray till soft and translucent, about 5 minutes. Set aside to cool completely.

In a large bowl combine ground meat, cooled onion, egg, parsley, garlic, tarragon, salt and pepper. Mush it around with a wooden spoon or your hands till well mixed. Form into 4 patties and broil 4 inches from the heat until brown, about 5 minutes per side. If you are lucky enough to have a grill and an outdoor space, obviously dispense with the broiling and head out to the grill with your manly tools and a glass of wine. Yield: 4
